One way to get kids to love vegetables is to get them to plant, take care of and pick their own from the garden. We don't have such a large garden, but the kids love getting their hands dirty and watching things that they plant grow. Not to mention the fact that they get excited about picking it off the plant when it is ready and eating it or proudly serving it to family and friends at the dinner table.
We have tried to make the garden as fun and kid friendly as you can, so you will see some old toys that reappear in our garden slide show. Once the kids plant a new vegetable, they also like to place a "guardian" plastic figure or toy next to it as a marker. A bit more fun than gardening sticks.
KidsGardeningOrg (US) is a great place to get news and ideas for gardening as youth projects, students, with your community and also with your kids. The Kitchen Garden (UK) also has a few great articles about training the youth to be gardeners of tomorrow.
Many daycare and elementary schools in Japan have gardening projects for the students as a part of the curriculum. It makes a lot of sense, learning to take care of a living thing is a wonderful thing to learn how to do in life.
